The first treatment to which the product is subjected is that of the whey cream skimming. In the skimmer, the raw material is separated from the fat cream and, at the same time, from the fines of the previous curd processing.

Therefore, the whey is bactofugated by a process that uses centrifugal force to remove heavier microorganisms and spores. Since it is not specific for pathogens, it must naturally follow a heating pasteurization process.

The passage in the plate pasteurizer, third step of the whey treatment, destroys all pathogenic

microorganisms and a really relevant part of the saprophyte microbial flora, with limited alteration of chemical, physical and organoleptic characteristics.
